Do you have any go-to breakfast favorites (besides the obvious bowl of cereal)?
On days that I work, a couple of mine include:
Indian Oatmeal Make a bowl of oatmeal (I use old fashioned rolled oats, but use what you like). When it's done cooking, add some sugar, a few pinches of cinnamon, a dash of ground cloves and a dash of ground ginger (go pretty light on these last two). Stir in all of the spices and top with coconut milk, raisins, and something crunchy (almonds are great, but I've been using shelled sunflower seeds, since that's what I've got on hand). Enjoy.
Peanut Butter English Muffin This is just about self explanatory. Toast an english muffin. Load it up with peanut butter (this is one of the rare instances that I prefer crunchy) and top with a few raisins.
On non-working days, or on the occasional day that I wake up early enough to make them (or enjoy them when Justin makes them) before work:
Egg Quesadillas Cook an egg sunny-side up, being careful not to overcook it - under cooking it slightly would be better actually. Season the egg with pepper and garlic salt if you've got it. While the egg is cooking, take a large tortilla and top half of it with a little shredded cheese (I like mozzarella), a handful of fresh spinach, and some tomato slices. Carefully place the egg on top of the tomatoes, and sprinkle with a little more cheese. Fold the tortilla in half over the egg. Add some butter or olive oil to your pan, and very carefully place the quesadilla into the pan, with the spinach side down. When the bottom is nicely browned and crunchy, flip and cook on the other side for just a few seconds (too long and you won't have runny egg yolks). Serve on it's own or with sour cream, salsa, avocado, etc. Knife and fork are absolutely necessary.
Egg in a Basket Like on V for Vendetta (and what Justin just made for me)! Butter a slice of bread - French or Italian type breads are nice, but sandwich bread works just fine - then use a glass to cut a circle in the middle of the bread. Put bread, butter-side-down into a buttered or oiled non-stick or cast-iron pan. Put the circle of bread in the pan as well to toast. Carefully crack an egg into the hole in the slice of bread and season with garlic salt and black pepper. Cook until the egg sets up on the bottom and the bread is toasted. Flip, and cook until the top of the egg white is set. Serve with the toasted circle of bread on the side for extra yolk-mopping action.
