Do you have any go-to breakfast favorites (besides the obvious bowl of cereal)?

On days that I work, a couple of mine include:

Indian Oatmeal
Make a bowl of oatmeal (I use old fashioned rolled oats, but use what you like). When it's done cooking, add some sugar, a few pinches of cinnamon, a dash of ground cloves and a dash of ground ginger (go pretty light on these last two). Stir in all of the spices and top with coconut milk, raisins, and something crunchy (almonds are great, but I've been using shelled sunflower seeds, since that's what I've got on hand). Enjoy.

Peanut Butter English Muffin
This is just about self explanatory. Toast an english muffin. Load it up with peanut butter (this is one of the rare instances that I prefer crunchy) and top with a few raisins.

On non-working days, or on the occasional day that I wake up early enough to make them (or enjoy them when Justin makes them) before work:

Egg Quesadillas
Cook an egg sunny-side up, being careful not to overcook it - under cooking it slightly would be better actually. Season the egg with pepper and garlic salt if you've got it. While the egg is cooking, take a large tortilla and top half of it with a little shredded cheese (I like mozzarella), a handful of fresh spinach, and some tomato slices. Carefully place the egg on top of the tomatoes, and sprinkle with a little more cheese. Fold the tortilla in half over the egg. Add some butter or olive oil to your pan, and very carefully place the quesadilla into the pan, with the spinach side down. When the bottom is nicely browned and crunchy, flip and cook on the other side for just a few seconds (too long and you won't have runny egg yolks). Serve on it's own or with sour cream, salsa, avocado, etc. Knife and fork are absolutely necessary.

Egg in a Basket
Like on V for Vendetta (and what Justin just made for me)! Butter a slice of bread - French or Italian type breads are nice, but sandwich bread works just fine - then use a glass to cut a circle in the middle of the bread. Put bread, butter-side-down into a buttered or oiled non-stick or cast-iron pan. Put the circle of bread in the pan as well to toast. Carefully crack an egg into the hole in the slice of bread and season with garlic salt and black pepper. Cook until the egg sets up on the bottom and the bread is toasted. Flip, and cook until the top of the egg white is set. Serve with the toasted circle of bread on the side for extra yolk-mopping action.

Cup of coffee and a Clif Bar. I'm not much of a breakfast person although I've been told I make fantastic French Toast.

I eat two eggs (cooked in a variety of ways) for breakfast nearly every day with various other stuff. Mostly turkey bacon, ham steak, oat bread, or some kind of whole grain cereal or oatmeal with fruit. I just kinda tailor what I eat to what kind of physical activity I'm planning for the day.

Lots of carbs for a running day and more meat and stuff for a day when I hit the weights.

I roll out of bed and get myself a small glass of OJ, sometimes a small bowl of cereal too but usually not. Once I get into work, its 2-3 cups of coffee and whatever food is in my desk. Usually granola bars, nuts, trail mix, or goldfish. Sometimes I'll have a yogurt.

I have no idea how you people have time to make a real breakfast in the morning.

Not much of a breakfast person either. Some OJ to take my pain killers in the morning, then a cup of hot tea to take into work. Sometimes I have 2 pieces of toast with just butter while running out the door, but usually a granola bar at work, if anything.

I'm not awake enough in the morning to make anything and I usually can't move that good with in 2 or 3 hours of waking up.

That's exactly what I was thinking, but then again, I have not bee ajusting well to this whole "day shift, 9-5 desk job" thing... So maybe it's something that develops once you get used to having a set schedule.

I try to make the time so that I don't spend so much money at Dunkin' Donuts. I never used to eat breakfast but have gotten so much into the habit of it over the past few months that I can't remember what it's like to skip it.

Lately, I've been having cottage cheese for breakfast. But I go in cycles. Sometimes it's yogurt, sometimes it's fruit. When clementines are back in season (so... next year?) I'll go back to 2-3 of those in the car on the way to work. For now, the cottage cheese is working out nicely, though I wish Trader Joe's carried individual servings. That would make it easier to eat in the car on the way to work.

I cooked French Toast for dinner the other day. I was told it turned out pretty awesome. I agreed with the sentiment.

You will need:

4 slices of French Toast Bread (they make this now and it rules, basically it's just thicker slices)
4 Large Chicken Eggs, or 10-12 quail eggs or 1/4 of an ostrich egg.
Vanilla
Nutmeg
Cinnamon
1 cup of Whipping Cream
Butter

I rarely measure anything out. I've always felt estimation adds a uniqueness to any recipe. But crack the eggs into a bowl. Add the whipping cream, vanilla, nutmeg (a shit ton of nutmeg), and cinnamon and mix but do not whip. Dip the bread in it until it's soaked. Melt butter in a frying pan or skillet. Fry pieces of bread until golden brown on each side. Serve with syrup of choice. You can sprinkle powdered sugar on if you really want to, but I'm already sweet enough.

Scrambled eggs with ketchup. Home fries. Corned beef hash. Buttered toast with marmite. English breakfast tea with cream and sugar.

That is my ideal breakfast.

Scrambled eggs with salsa is also good.

I would not, could not eat eggs w/ ketchup; that is really gross to me. However, I frequently put hot sauce on my eggs, and have many a times enjoyed egg dishes with tomatoes or even marinara sauce. But for some reason, ketchup & eggs doesnt work for me.

Oh how I miss corned beef hash. That is one product that I've never found a vegetarian version of. If anyone knows a veg version, please share!
